Anna Siegfried's Strawberry Pesto Galette is the epitome of summer dessert perfection. Fresh strawberries, creamy pesto, and flaky crust come together in a sweet symphony that's almost too beautiful to eat...almost. 🍓

FOR THE PASTRY ⁣⁣
1 ½ cups flour (if gluten free, use King Arthur Measure for Measure)⁣⁣⁣⁣⁣⁣⁣⁣⁣
½ tsp baking powder
2 tbsp. sugar⁣⁣⁣⁣⁣⁣⁣⁣⁣
6 tbsp. unsalted cold butter ⁣
1 egg ⁣⁣⁣⁣⁣⁣⁣⁣⁣
1/4 cup cold water⁣⁣⁣⁣⁣⁣⁣⁣⁣
2 tbsp. pesto⁣⁣⁣⁣⁣⁣⁣⁣⁣
1 tsp lemon juice⁣⁣⁣⁣⁣⁣⁣⁣⁣
⁣⁣⁣⁣⁣⁣⁣⁣
FOR THE FILLING: ⁣⁣⁣⁣⁣⁣⁣⁣
½ cup sugar ⁣⁣⁣⁣⁣⁣⁣⁣
1 tsp finely grated lemon zest ⁣⁣⁣⁣⁣⁣⁣⁣
1 tsp balsamic glaze ⁣⁣⁣⁣⁣⁣⁣⁣
1 ½ lb. strawberries (about 5 cups) ⁣⁣⁣⁣⁣⁣⁣⁣
1 tbsp. chopped fresh basil ⁣⁣⁣⁣⁣⁣⁣⁣
3 tbsp. cornstarch ⁣⁣⁣⁣⁣⁣⁣⁣
⁣⁣⁣⁣⁣⁣⁣⁣
FOR THE EGG WASH⁣⁣⁣⁣⁣⁣⁣⁣
1 egg white ⁣⁣⁣⁣⁣⁣⁣⁣
1 tsp milk or cream ⁣⁣⁣⁣⁣⁣⁣⁣
1 ½ tsp sugar ⁣⁣⁣⁣⁣⁣⁣⁣
⁣⁣⁣⁣⁣⁣⁣⁣
FOR GARNISH⁣⁣⁣⁣⁣⁣⁣⁣

1. Add the first three ingredients to a large bowl and whisk to blend.⁣⁣⁣⁣⁣⁣⁣⁣⁣
2. Add the grated cold butter and use your hands to cut the cold butter into the dry ingredients. ⁣⁣⁣
3. In a smaller bowl, add the egg, water, pesto and lemon juice and whisk.⁣⁣⁣⁣⁣⁣⁣⁣⁣
4. Pour the wet ingredients into the dry ingredients and mix into the dough.⁣⁣⁣⁣⁣⁣⁣⁣⁣
5. Wrap the dough in plastic wrap and chill for a minimum of 30 minutes.⁣⁣⁣⁣⁣⁣⁣⁣⁣
6. On a piece of parchment, roll the dough to a 12-13” circle. ⁣⁣⁣⁣
7. For the filling: stem the strawberries and slice into pieces about 1/8” thick. ⁣⁣⁣⁣⁣⁣⁣⁣
9. In a bowl, combine the strawberries, lemon zest, sugar, balsamic glaze and cornstarch. ⁣⁣⁣⁣⁣⁣⁣⁣
10. Arrange the strawberry mixture in the center of the dough, leaving a 2” border. ⁣⁣⁣⁣⁣⁣⁣⁣
11. Fold the dough border up over the berries. ⁣⁣⁣⁣
12. Make the egg wash – brush it over the pastry and sprinkle with sugar.⁣⁣⁣⁣
14. Bake the galette for 35 minutes, rotating halfway through baking. Drizzle with balsamic glaze, garnish with our living fresh basil.
