Tortellini Soup

The perfect soup to warm up with.

Over medium heat, in a large dutch oven cook your ground Italian sausage. Breakup the meat as you stir, cooking completely. Once cooked, remove to a plate or bowl and set aside. Add your onion, carrot, and olive oil. Simmer until onions are translucent. Add the garlic, and cook for a minute, just until fragrant. Add the chicken stock, milk, heavy cream, pasta sauce, diced tomatoes, and salt and pepper to the pot. Stir until combined. Simmer for 10 minutes. Add the tortellini into the mixture and allow the soup to simmer for 15 minutes. Stir in your finely chopped basil and add the cooked sausage. Let simmer for another 5-10 minutes, or until the meat is warmed and serve. Top with parmesan cheese and more basil, enjoy!
