Salmon with Creamy Lemon Sauce

Just the right amount of tart lemon flavor mixed with salty capers.

Directions:

Start by preheating your oven to 400° F. Drizzle a bit of olive oil in a large skillet to lightly coat the bottom and heat on medium-high until hot. Season the salmon on all sides with salt and pepper and then sear on both sides. Once seared, move salmon to a baking sheet and bake for 12-15 minutes, or until just done through.

While your salmon is baking, make your sauce. Add the shallot to the skillet and saute until soft, about a minute. Add the wine and let simmer and reduce for a couple of minutes. Add the lemon juice and cream to the skillet and bring to a simmer. Then add the fresh dill, capers, and salt and pepper to taste.

When the salmon is done add it to the skillet, nestling it down into the sauce. Spoon some of the sauce over the fish and garnish with lemon and more fresh dill. Enjoy!
