Hand Me Hand Pies

Pie you can eat with your hands… This sounds like a dream come true! What more could you ask for?

Okay, but for reals. We were thinking about Thanksgiving and just how busy everything can be. Usually we end up being a guest for at least one family or friend gathering and typically you don’t come empty-handed. Whether it be a bottle of wine or a simple dessert, it’s always a good idea to come armed with something for the host.

All that’s to say, we thought about hand pies: how they are so delicious, relatively easy to make, and so portable you won’t have to worry about getting it to the party. Just make sure you keep them hidden from the sweet tooth of your family.

As a side note – not every hand pie has to be sweet. They can also be savory! Whether it be the classic combo of ham and cheese or, if you’re feeling fancy, caramelized onions with sautéed mushrooms and thyme, you can get some pretty tasty combinations going on. While we highly recommend experimenting with all different kinds of recipes, we decided to focus on sweet, dessert-style hand pies for the holidays. We also love the surprising way that our living herbs can complement pretty much any sweet dish.

Without further ado, we give you two hand pie recipes that are so good you might just need to make them more than once this holiday season. This Blueberry Basil Hand-Pie is as tasty as it is beautiful. We know, the goat cheese kind of has you do a double take. Trust us, cheese does belong in pie, or at least this pie. Promise. The sweetness of the blueberries pairs perfectly with the tartness of the goat cheese. The basil blends in to create quite a beautiful mix of flavors. Added bonus, they are so darn cute! We made ours in a few different sizes but found that the larger 4-inch rounds had a better crust-to-filling ratio, but feel free to do as much pie taste testing as you see fit. Wink, wink.

Next up we wanted to get a little tricky, so we decided to make from scratch. Does anyone else feel like there are either people who always make the crust from scratch (and think it makes the pie) or people that rely on the pre-made crust? To be totally honest, we love the pre-made stuff. Its saves time and is always good. That being said, we do like a challenge every once in a while. These Apple Hand Pies with Herbed Crust are just the ticket. The sweet of the apples mixed with the rosemary and thyme add a depth to each bite that layers together perfectly. We love using this crust recipe for other pies, too, so don’t forget about it!

Now we don’t know about you, but one of our favorite things to serve with pie is ice cream. Going with the classic vanilla is a must, but what about all those people that don’t really like pie?

We know, who doesn’t like pie? Believe it or not, there are a few people out there that don’t really care for it. So, we thought we would add a little something for those folks. Plus, everyone is going to like this recipe. Pumpkin Sage No Churn Ice Cream. This is a winner. You may just have to have this on hand for the rest of the month. This ice cream isn’t overly sweet, has the perfect amount of spices, and the subtle sage note makes for a decadent holiday ice cream. Plus, with all the pie you are making, you are bound to have a bit of extra pie crust. Using a small holiday cookie cutter, bake up a few pieces of crust to top your ice cream with. It’s super simple and makes for a really cute topper!
