Turkey Taco Bowl

An easy, go-to Mexican style dish that is sure to win over the kiddos.

Directions:

Begin making these Turkey Taco Bowls by preheating your oven to 425° F. In a large skillet add 1 tablespoon of olive oil and heat over medium-high heat. Add the ground turkey and taco seasoning, cooking for 8-10 minutes or until meat is cooked through.

On a lined baking sheet, season bell pepper and onion with salt, pepper, and 1 tablespoon olive oil and toss. Spread evenly on baking sheet and place in oven for about 15-20 minutes or until veggies are browned. While the veggies are in the oven, heat black beans in a small saucepan and cook corn according to directions.

Once everything is ready, distribute the rice, beans, turkey, bell peppers, and corn. Generously top with cheese, cilantro, and one lime wedge. Enjoy!
