Tomato Basil Omelet
A blissful breakfast omelet with fresh basil is all you need in the morning.
In a small bowl whisk eggs and milk together. Then heat a small nonstick skillet over medium-low heat and pour in the egg mixture. Gently push cooked portions from edges toward the center, tilting the skillet so that the uncooked egg can reach the outer areas of the hot pan.
Once the top of the eggs are cooked and no liquid egg is visible, place tomatoes, basil, and Parmesan to one side of the omelet, season with salt and pepper, and fold in half. Slide the finished omelet on your plate and top with a little Parmesan and basil. Enjoy!
