Strip Steak Salad
A light and fresh salad for lunch or dinner.
Fire up your grill, set to medium-high heat. Season steaks with salt and pepper and place on grill. Flip once slightly charred, about 4-5 minutes per side for medium rare. Transfer to cutting board and let rest for 15 minutes. Slice into thin strips.
Toss your spring mix salad, arugula, onion, and parsley in a medium bowl. Drizzle with lemon juice, oil, and season with salt and pepper. Toss to coat. Top with avocado, tomato, red bell pepper, feta cheese, and chives. Drizzle steak with oil and salt and pepper and serve with the salad. Enjoy!
