Classic Pesto with a Twist
A simple change takes this classic sauce to the next level.
Using a spiralizer, make your zucchini noodles and place them in a thin layer on a baking sheet lined with a paper towel. Sprinkle with salt and pepper and set aside.
In a food processor or blender combine all other ingredients besides the olive oil, pulsing until chopped and well combined. Then pulse in the olive oil and taste, adding salt and pepper if needed. Feel free to add more oil until you reach desired consistency.
Pat the zucchini noodles dry and place them on a large serving platter, top with pesto, and toss until combined. Enjoy!
