Baked Potato Chips

Salty, savory, and way better than normal potato chips!

Directions:

Preheat your oven to 375° F. Thinly and evenly slice the potatoes using a knife or a mandolin. Brush or spray a thin and even layer of olive oil on a thick-bottomed tray. Arrange the potato slices on the sheet and sprinkle with dill, chives, and salt and pepper. Flip over and repeat, brush with olive oil, more herbs, and salt and pepper.

Bake for 7 minutes, then rotate the pan for even baking for another 7 minutes. Flip each slice then bake for a final 5-7 minutes until the slices have browned. Remove from oven and let crisp on the sheet for 10 minutes. Enjoy!
