Fall Arugula Salad with Apple Vinaigrette
A fresh and flavorful fall salad!
Let’s make a Fall Arugula Salad filled with all the flavors of the season! This Apple Arugula Salad brings together crisp apples, Living Herbs, creamy feta and a homemade apple vinaigrette.
Preheat the oven to 350°F and line a baking sheet with parchment paper.
Add the walnuts and pepitas to the baking sheet and toss with maple syrup, cayenne and cinnamon. Spread into an even layer, then arrange the prosciutto around the nuts. Bake for 10–15 minutes, until the nuts are toasted and the prosciutto is crisp. Finish the nuts with a sprinkle of flaky sea salt.
While everything is toasting, add the arugula, sliced apples, dried cranberries, feta and basil to a large salad bowl.
For the vinaigrette, combine the olive oil, apple cider vinegar, dijon, maple syrup and thyme in a jar or tall container. Season with salt and pepper, then blend with an immersion blender until smooth. Or, add everything to a jar with a tight-fitting lid and shake well to combine.
Top the Apple Arugula Salad with the maple-toasted pecans and pumpkin seeds and crispy prosciutto. Drizzle with the apple vinaigrette and gently toss. Enjoy!
