Spicy Roasted Cauliflower Wraps
The perfect amount of spicy for this healthy snack.
Begin by adding the cashews to a small bowl and cover with water. Set aside to soak for 4 hours to overnight.
Preheat the oven to 350° F. Cut cauliflower into bite-size halves or quarters. In a large bowl mix together the olive oil, lemon juice, cumin, ground coriander, turmeric, and crushed garlic. Add cauliflower florets and chickpeas and toss until combined. Transfer to a baking sheet and cook for 20-25 minutes until golden and soft.
Drain cashews and place in a blender with remaining sauce ingredients. Blend until smooth.
To serve, lay a lettuce leaf flat and top with roasted cauliflower, chickpeas, and cashew sauce. Enjoy!
