Smashed Crispy Potatoes
These crispy little gems are the perfect side to so many dinners.
To make these Smashed Crispy Potatoes, start with preheating your oven to 420° F. Bring a large pot of water to a boil, salt generously, and add the potatoes in whole. Cook for 20 minutes, taking care not to poke them too many times as this will make them absorb more water and take longer to crisp in the oven later.
After they are cooked, drain well and make sure they are completely dry. Line a large baking sheet with parchment paper and, using a fork, squish the potatoes almost flat on the sheet. Don’t worry if they split unevenly, this is what gives you the crispy bits. Pour over the olive oil and then dot each potato with butter. Season well with salt and pepper and top with thyme. Cook for 30-35 minutes or until crispy and golden. Enjoy!
