Nachos with a Twist

Healthy-ish twist on an old favorite.

Directions:

Preheat your oven to 425°F and line a large baking sheet with parchment paper or a silicone mat. Place the bell pepper slices on the baking sheet, and toss with the olive oil, cumin, chili powder, garlic powder, salt, and pepper. Lay the slices cut side up in a single layer on the baking sheet. Bake for 15 minutes, until the peppers are tender and starting to brown.

Remove from oven and top with beans, bacon, cilantro, chives and both cheeses. Return to the oven and bake until the cheese is melted, about 5 minutes. Remove and top with desired toppings. Enjoy!

Cheddar Cheese, shredded
