Herbed Hasselback Potatoes
A crisp & flavorful alternative.
Preheat oven to 400 degrees. Slice potatoes into thin slices without cutting all the way through the potato or about 80% of the way through. Melt butter and combine with olive oil, herbs, salt and pepper. Place the potatoes in a cast iron or baking dish and drizzle with herby butter garlic mix, keeping 1 ½ tablespoon for drizzling on after. Bake for 1 -1 hour 25 min or until golden brown and tender. Drizzle with remaining herby garlic butter mix, garnish with fresh rosemary sprigs, ripe tomatoes, and serve. Enjoy!
