Herb-Roasted French Onion & Prosciutto Grilled Cheese

A cozy twist on a classic grilled cheese!

Let’s make a French Onion Grilled Cheese layered with caramelized onions, crispy prosciutto, Living Herbs and melty Gouda!

 

Finely chop the Roasting Mix, thinly slice the onions, and shred the Gouda cheese. Set aside.

Heat olive oil in a large skillet over medium heat. Add the onions and season with salt and pepper. Cook for 5–7 minutes, stirring occasionally, until they begin to soften.

Pour in the apple cider and continue cooking for 8–10 minutes, stirring occasionally, until the liquid has cooked down and the onions are soft and golden. During the last minute of cooking, stir in the fresh Roasting Mix and 1 tbsp of butter. Remove from the heat.

Add the prosciutto to a skillet over medium heat and cook for 1–2 minutes per side, until crisp. Set aside.

Layer half of the bread slices with gouda, caramelized onions and crispy prosciutto. Add another layer of cheese, then top with the remaining bread slices.

Add 1-2 tbsp of butter to the skillet and cook the sandwiches over medium-low heat for 3–5 minutes per side, until the bread is golden and crisp and the cheese is melted. For an extra-crisp sandwich, gently press the sandwiches with a clean, heavy pan while they cook. Enjoy!
