Avocado Toast with Smoked Salmon

A simple twist on a breakfast favorite.

Directions:

Begin by making the dressing. In a medium bowl, combine all dressing ingredients and whisk. Set aside.

Halve the avocado, remove the stone, and scoop the flesh into a bowl. Then add the yogurt and lemon juice and mix well with a fork. Season with salt and black pepper. Divide the avocado mixture between the toasted rye bread, sprinkle with a little cayenne pepper, and add the smoked salmon and cucumber. Spoon over the dressing, then top with microgreens. Enjoy!
